FRUIT JUICE POWDER
The war brought many new problems concerning fruit processing, among them being the provision of economics in space for storage of all sorts of food products and in this way the spray drying of soft fruits and their juices was examined. The constituents of chief importance appears to be pectin, for juices that have been thoroughly depectinised do not form good powders, and are liable to absorb moisture, with diastrous results to quality.  If a completely soluble powder is needed, which calls for a juice as a raw material (i.e. rather than a puree), then it is necessary to return pection to the depectinised juice, using either apple or citrus pectin for the purpose.  The preliminary and commercial follow-up work has been carried out on a kestner machine with every satisfaction.  Lemon, apples and oranges are the main fruits which can be processed into powder form. Glucose-D is the common commercial name for the pure, crystalline, solid recovered from almost completely hydrolyzed starch. It contains dextrost, maltose and higher poly sacharided derived from starch by acid or enzyme hydrolysis or by a combination of the t wo Glucose-D is actually. PINE APPLE JUICE MANUFACTURING & CANNING
The pineapple is botanically known as Ananas Comusus. It is one of the most important fruits of the eastern region especially in Assam, Tripura, Darjeeling, Nagaland etc. The fruit is delicious when fully ripe, and is very rich in Vitamin A, B and C and mineral salts. It is not only used as a fresh fruit, but also preserved as canned pineapple rings or slices, jam, squash, etc. Pineapple products are in great demand and are sent to the soil and climate. The pineaple is rather exacting in its requirement of soil and climate. The sweetness of the fruit depends on these factors. The soils most suitable for pineapple are the well-drained loam or sandy loam soils of the plains and laterite soils of the hills, which are rich in organic matter. It needs an acid soil of pH 4.5 to 5. It grows both in tropical and subtropical climates up to an altitude of about 3,000 feet, with the temperature ranging from 60o to 90oF. An altiutde up to 800 feet might be considered safe for its cultivation. It requires a rainfall varying from 30 to 200 inches annually, particularly where the crop is dependent on natural precipitation. CONDENSED MILK SWEETENED
The advent of condensed milks belongs to the nineteenth century. In 1809, nicholas Appert (1749 - 1840), a French Food Scientist, annouced his discovery of a means  of preserving milk (without the admixture of sugar or other preservatives) by the following method: the milk was condensed by heating it in an open vessel placed in a waterbath over fire, to about two-thirds of its original volume. The condensed milk was strained,cooled and poured into glass bottles,filling them to the brim and corking them tightly. The bottles so filled and sealed were then held in a boiling waterbath for two hours. The milk so treated was found to have very good keeping quality.
