Cocoa is the product of the fruit of the cocoa tree (Theobroma cacao), which requires a hot, wet climate, a mean shade temperature of 27°C, and well-distributed rainfall. Consequently, cocoa can be grown primarily in regions within 20° latitude of the Equator. Although the cocoa tree is indigenous to Latin America, Africa accounts for over 70% of the world's cocoa bean production, with major producers including the Ivory Coast, Ghana, Nigeria, Cameroon, Indonesia, Papua New Guinea, Malaysia, Ecuador, Brazil, and Colombia.
Cocoa farming is largely manual and requires considerable expertise, with much of African cocoa produced on small family farms. After harvesting, cocoa beans undergo fermentation and drying to develop the characteristic chocolate flavour before further processing. Industrial cocoa processing produces cocoa liquor, cocoa butter, and cocoa powder, which are widely used in chocolate, confectionery, bakery products, biscuits, cakes, ice cream, chocolate spreads, and syrups.
Cocoa powder is produced by pulverizing the material remaining after part of the fat is removed from chocolate liquor. Depending on fat content, cocoa powder may be classified as high-fat, medium-fat, or low-fat cocoa. Commercial cocoa may also be treated with alkali, or "Dutched", to develop distinctive colour and flavour characteristics. It is commonly incorporated into cookies, biscuits, cakes, ice cream, confectionery coatings, chocolate spreads, and syrups. Its characteristics can vary according to the cocoa beans used, processing conditions, fat content, and whether the powder is treated with alkali. Natural cocoa generally has a more acidic profile, while alkalized or "Dutched" cocoa can provide different colour, flavour, and pH characteristics.
Cocoa beans are first removed from ripe pods and subjected to fermentation and drying before industrial processing. Fermentation typically lasts several days and generates heat that activates biochemical changes responsible for developing chocolate flavour precursors.
