Potato is a starchy, tuberous crop belonging to the perennial Solanum tuberosum species of the Solanaceae family, commonly known as the nightshade family. The term potato refers both to the plant and its edible tuber. Several closely related cultivated potato species are found in the Andes region. Potatoes were introduced beyond the Andes approximately four centuries ago and have since become an integral part of cuisines worldwide. They are recognized as the world's fourth-largest food crop after rice, wheat, and maize.
Potatoes were domesticated in the area of present-day southern Peru approximately 7,000–10,000 years ago. Centuries of selective breeding have resulted in more than a thousand potato types. Potato production and processing support a wide range of food applications, including dehydrated potatoes, potato flakes, flour, granules, and powder. Because long-term storage requires specialized cold-warehouse conditions, processing into dehydrated products provides an important way to extend usability and facilitate handling, storage, and food-industry applications.
