Sorbitol, also known as glucitol, is a low-calorie sugar alcohol or polyol derived commercially from sources such as fruits, corn and seaweed. It occurs naturally in fruits including prunes and apricots and is widely used for its sweetness, moisture-retention properties and functional characteristics. Commercial applications include sugar-free confectionery, chewing gum, frozen desserts, dietetic products and pharmaceutical preparations, while its humectant properties support applications in cosmetics and personal-care products.
Sorbitol has the molecular formula C6H14O6 and is a white, odorless, sweet-tasting material. It is approximately 60% as sweet as sucrose and is absorbed relatively slowly compared with glucose. Its commercial manufacture expanded significantly during the mid-1950s following the development of applications in cosmetology and non-cariogenic confectionery.
The project covers the manufacture of sorbitol from maize starch through liquid glucose/dextrose production and subsequent conversion into sorbitol.
